MY GO-TO BREAKFAST - VICIOUS KITCHEN

I remember being a little girl waking up to the most delicious smells coming from my grandma's kitchen. I would stumble out of bed in my pajamas trying to reach the table.  My grandma loved to cook.  She basically lived in her kitchen.  Anytime of day we visited her she was in the kitchen and she was always ready to cook up a delicious meal.  When our family moved from Mexico City to Long Beach I completely lost touch with my grandma.  I wish I would have had a chance to write down some of her recipes.  Well, now I have my own kitchen.  Vicious Kitchen.  I love to cook and Vicious Kitchen is  my own little space where I can prepare delicious food and share it with friends.  A place where I can be an artist.

My go-to breakfast is a smoothie.  I have a full time job at a law firm and so I am limited on time when it comes to breakfast.  However, I do like to give myself the luxury of making myself a delicious smoothie.  Smoothies are the perfect go-to breakfast because they are easy to make and taste delicious.  I love that I can pretty much just throw everything in a blender and press a button!  Plus, having fruit for breakfast reminds me of being on vacation, in Hawaii, laid out on the beach...

Having a well stocked freezer and the right ingredients helps.  So there is a little prep required but it's minimal.  My favorite smoothies are healthy green smoothies that can hold me off until lunch.    Here's what I do in the morning:

Ingredients:

1 banana
1 cup of frozen berries
3 eggs
1 table spoon of coconut oil
1 to 2 cups of spinach
1 cup of water

In a blender, I throw in the frozen berries (strawberries, or blueberries or blackberries).

Then, I peel and toss in a banana.

Next, I like to add coconut oil because it's a "good fat" (Google it) and it keeps me full longer.

Then I add the eggs and the spinach.  I add eggs for protein, because I love to ride my bike to work, and I need the protein.

Finally, I add a cup of water and blend everything together!

Serve on a tall glass and drink!  If it all sounds too easy, it's because it is.  I love to keep things simple.

So there you have it.  The next time you need a quick breakfast, make yourself a smoothie like I do at Vicious Kitchen.

  1. Yum!!! I gotta try that. I ususally do a protein shake thats already premade. Its chocolate flavored so it helps me with my sweet tooth. Only has one gram of sugar. I also like to do berries with yogurt and granola or protien pancakes with honey and bananas.

  2. Sounds delicious!
Every morning, I make a breakfast sandwich! Nothing special. I use 100% Wheat toast, eggs and bacon... sometimes cheese and avocado. That's when I remember to add them.
    Less than 10 min deal!
